TIME Magazine: How to Eat Now

Eat at home because it's good for you, it's good for your family and it's far easier than you think, says best selling food writer Mark Bittman, in a Times cover story last year.

In today’s fast paced world we consume over 30% of our daily calories away from home. These less-than-wholesome calories are accumulating around our waists and draining our bank accounts.

So why do we eat out and shun the kitchen? Simple: convenience. We don’t have the time to toil away over a hot stove. However, evidence is mounting that we are paying big for the so-called convenience of outside food.

Obesity related diseases are on the rise, as are the number of folks who are just plain unhappy with how their bodies look and feel. Cooking at home seems to be the first step in our road to healthier bodies.

Here are the top 5 reasons that you should starting cooking and eating at home…

Reason #1: It’s Good For You
Hyperprocessed foods are harmful to our health, and that’s exactly where you’ve been getting the bulk of your calories. Even restaurant food that contains fresh produce, chances are high that the produce is not organic, or local or non-GMO. Most of us are eating less than half of the recommended amount of fiber, fruit and vegetables, which eating at home could quickly change.

Simple meals made at home with fresh produce and organic meats or eggs are nutritionally superior to over-flavored, over-processed restaurant food. Not to mention the high calorie beverages and starters that so often accompany a restaurant meal. When you eat at home you take in more nutrient-dense calories that are higher in fiber.

Reason #2: It’s Far Easier Than You Think
Eating out so often has conditioned our concept of a meal to be one with complicated flavors and accompaniments. This misconception has made us fear the kitchen. But I urge you to reconsider.

Meals made at home need not mirror those ordered in restaurants. On the contrary, simple is better when it comes to home cooking. Plan your entire meal around a couple of pieces of fresh produce and a wholesome, lean protein. No need for complicated sauces or sides – these are where the harmful calories hide anyway.

Reason #3: It Costs Less
Fresh, simple ingredients do not cost much. Especially when compared to the cost of prepared meals. Bittman’s advice on ingredient shopping is to, “Buy what you can afford, and cook it yourself. Rice, beans, salad, bread –few things are cheaper than that.”

Shopping the perimeter of the store is always a good plan. Here you’ll find the fresh produce, meats, dairy and seafood. Venture into the aisles for oils and spices to compliment the fresh ingredients.

Reason #4: It Is Preventative Medicine
In the US the annual health care expenses related to obesity is $150 billion, according to the Center for Disease Control and Prevention. Worldwide this number is over $1 trillion annually. These numbers are staggering, and sobering when you think of all the individual lives that are being negatively impacted by obesity.

Rather than waiting for you and your family members to experience the health risks related to obesity, start your own mission to cook simple meals at home and redirect your future. Remember the words of Benjamin Franklin, “An ounce of prevention is worth a pound of cure.”

Reason #5: It Reduces Body Fat
Eating at home is also one of the best ways to reduce your body fat. Bittman states that meals eaten at home contain an average of 200 calories less than meals eaten out. Let me tell you, a reduction in 200+ calories per meal will quickly translate to pounds lost!

Simple Turkey Soup

Servings: 8

Here’s what you need...
              2 teaspoons olive oil
              2 garlic cloves, minced
              1 bunch of carrots, chopped
              2 onions, chopped
              1 bunch of celery
              1 fennel bulb
              1.3 lbs lean ground turkey
              4 cups veggie broth
              1 (14.5oz) can stewed tomatoes
              4 ears of corn, kernels sliced off cobb
              3 Tablespoons tomato paste
              2 teaspoons dried basil
              Dash of salt and freshly ground pepper

1   In a large skillet heat the olive oil. Add garlic. Add chopped carrots, cover for 5 minutes. Add onions, celery and fennel. Sauté until soft.

2   In another skillet cook the ground turkey over medium heat until fully cooked, stirring often. Drain off excess fat.

3   Transfer the veggies to large soup pot and add the remaining ingredients, and the cooked turkey. Cover and cook over low heat for 40 minutes. Add extra water as desired.


Nutritional Analysis: One serving equals: 274 calories, 6g fat, 480mg sodium, 34g carbohydrate, 10g fiber, and 21g protein.

Monthly Client Spotlight!

SPOTLIGHT ON……  Ted Hrabota!


September 2015!!


Hi, I'm Ted Hrabota. I am a 66-year-old retiree who has lived in Valparaiso for the last thirty years. I have always been interested in sports in one way or another.  It all began with Little League Baseball, then on to high school and college football. I even found time to fit golf in once in a while. When I turned 18, I became very interested in umpiring and began officiating softball games in the area. I umpired for the next 40 years. I also coached summer softball leagues for over 25 years and coached high school softball for 13 yrs. So as you can see, I stayed quite active in sports for a majority of my lifetime.
     
About 10 years ago, I started loosing the feeling in my feet and hands. This condition is commonly known as neuropathy.  The doctors were unable to determine what the exact cause of my condition was so it was suggested to me that I take a trip up to Mayo Clinic in Rochester, Minnesota. After 3 days and a whole battery of tests, it was determined that I had spinal stenosis, which is basically calcium deposits built up on the spine and pressing against the spinal cord.  My spinal cord was being compressed in four different places and not allowing it to move. Surgery followed one week later and then the long road to recovery. The first year, I was only allowed to lift 7 lbs.  The second year, I was up to 15 lbs. Then I was allowed to start physical therapy.  Physical therapy wasn’t as effective as it could have been because it did not take into consideration the problems that I still had with my neuropathy.
     
This is where Pumps steps in. My wife had taken a boot camp class with Ian at the Valpo YMCA. She told me that Ian had told the story of his own recovery from surgery and might be able to help me. Ian understood exactly what problems that I was encountering during my rehab and took all of them into consideration as he proceeded to help me in getting back to a much more normal and functional life than I had been leading prior to coming to Pumps. My strength has been returning at a steady rate and Ian has also worked extensively with my balance, which has been impaired due to my neuropathy.
     
I just recently was able to take advantage of Ian as a RESET practitioner.  He was able to help me after I did something to injure a muscle in my left hip and I was unable to perform many of my exercises. I am moving well now and ready to get back to training once again.
     
I would like to thank Ian and Pumps Fitness for helping me to get to where I am today.  I am leading a much fuller life because I now am able to do much more for myself.  I’m stronger, both physically and mentally, and my family and I are grateful for it.

Now when you look at your current diet, which is likely filled with high carb and high sugar items, then making the switch to a diet focused around protein and fiber may seem hard to do. Southwest Chicken
Serve this flavorful Southwest Chicken with a heaping side of dark leafy greens. This is the epitome of a meal focused on protein and fiber. It's meals like this that will melt off body fat and improve your health and fitness. Enjoy! Servings: 6


Here's what you need...
              2 lbs organic chicken breast or vegetarian cutlets
              Dash of sea salt and black pepper
              1 Tablespoon coconut oil
              1 small yellow onion, chopped
              1 tomato, seeded and diced
              2 Tablespoon chili in adobo sauce
              1 Tablespoon chili powder
              1 Tablespoon balsamic vinegar
              1 teaspoon ground cumin
              1/2 teaspoon sea salt
              1/4 teaspoon ground cinnamon

1              Rinse the chicken breasts and pat dry. Butterfly cut the chicken, opening each breast up like a book. Sprinkle both sides with salt and pepper. Place the chicken in a baking pan and set aside in the fridge as you prepare the sauce.
2              Place the coconut oil in a skillet over medium heat. Add the chopped onion and sauté until soft, about 5 minutes. Add the remaining ingredients and continue to cook for about 10 minutes. Use a hand blender to puree the sauce until smooth.
3              Coat the chicken with half of the sauce and marinate for 30 minutes. Preheat the oven to 350 degrees F.
4              Cover the chicken with foil and bake chicken for 30 minutes in the preheated oven. Serve warm with a spoonful of the reserved sauce. Enjoy!
5              Vegetarian style: Cook cutlets as directed, smother with sauce and enjoy!

7 Ways To Reduce Body Fat

Got body fat? This week we have 7 simple and effective ways for you to shed that unwanted body fat. While fat loss can be quite frustrating, these 7 strategies are proven to help you slim down fast.

1. Drink a Gallon of Water
Water is always a crucial element for proper bodily functions, and even more so when fat loss is your goal. The conversion of fat into energy takes place in your liver, and this process requires that you be well hydrated.

Drinking a gallon of water over the course of your day is a wonderful goal to aim for. This goal is easily met when you get into the habit of sipping water throughout the day, coupled with drinking a full glass before meals, upon waking and before bed. Get your self a large water bottle, preferably with a straw. Fill, sip, repeat. It is that easy!

2. Cut out Alcohol
This fat loss tip is always met with groans, but despite its unpopularity it remains one of the most effective. The first reason that alcohol should be cut out in order to lose fat is that it’s filled with empty calories. These are simple sugars that taste great but add up quickly as stored fat in all the wrong places.

The second reason that alcohol should be cut out is that the simple energy that your body derives from the alcohol will be used as energy long before your fat stores are tapped, making it impossible to reduce body fat on days when alcohol is consumed. That should be incentive enough for you to put down your glass and reach for some water.

3. Do a Variety of Aerobics
Variety is key when it comes to the aerobics side of your routine. Getting in calorie-burning activities is crucial to quickly eliminating fat stores. We no longer believe that long cardio sessions are the holy grail of fat loss – but getting your body moving with calorie-burning activities is a wonderful way to intensify your fat loss results.

4. Cut out Processed Junk
This is one of the easiest ways to quickly and effectively reduce body fat, and yet it is met with such resistance. Why? Why is it so difficult for us to give up our packaged, processed snacks and treats? This is one obstacle that prevents most people from achieving the body that they want.

The best tip for successfully getting processed junk food out of your life is to have wholesome alternatives on hand while removing the junk food from your home. If you are a late night snacker, then be prepared by having fresh fruit, sliced veggies, plain Greek yogurt or other wholesome snack replacements on hand. When your belly is full of wholesome snacks, it’s hard to care too much about the processed junk you missed out on. And soon you’ll learn to love how lean and energetic these healthier foods make you feel.

5. Lift Weights
You might consider this to be pretty obvious, but many people are still resistant to the idea that resistance training leads to fat loss. If you find yourself puzzled by the idea that lifting heavy things will reduce the layer of fat on your body, then allow us to explain.

The act of lifting weights causes those targeted muscles to stimulate new muscle tissue growth. Now this doesn’t mean that your muscles are going to get noticeably larger (relax, ladies!) but it does mean that your muscle tissue will become tighter and more toned. The increase in muscle translates to a higher metabolism, which means that your body will naturally burn fat faster and more efficiently.

6. Use HIIT
High Intensity Interval Training is a method that has been quite popular in the past decade – and for good reason. This advanced form of aerobics, when done correctly, is one of the most effective methods for burning fat.

HIIT is achieved by performing short, intense burst of aerobic intervals between less intense bouts of aerobics. For example, 2 minutes of walking followed by a 30 second sprint, done for 20 minutes.

Low Carb Pumpkin Muffins

Here’s what you need...
              1/2 cup coconut flour (find at natural foods store)
              2 teaspoons ground cinnamon
              1/2 teaspoon ground nutmeg
              1/4 teaspoon ground cloves
              1/2 teaspoon baking soda
              1/2 teaspoon salt
              1/2 cup canned pureed pumpkin
              6 eggs, beaten
              3 Tablespoon coconut oil, melted
              1/3 cup honey
              1 teaspoon vanilla extract
              12 pecans for topping
1              Preheat oven to 400 degrees F. Oil muffin pans.
2              In a medium bowl, combine the coconut flour, spices, baking soda and salt.
3              In another bowl, place the pumpkin puree then add the eggs one at a time, mixing well after each addition. Add melted coconut, honey and vanilla and mix until well combined.
4              Add the flour mixture to the pumpkin mixture, blend with a whisk until most lumps have disappeared.
5              Spoon into prepared muffin pan, filling each muffin 2/3 full. Bake for 18-20 minutes or until golden.
6              Place on wire rack to cool.


Nutritional Analysis: One serving equals: 127 calories, 7g fat, 230mg sodium, 11.7g carbohydrate, 3g fiber, and 5g protein.
